Budget Meals: One-Pan Italian Chicken
Forget the mess with this one pan chicken dish with lots of fresh tomato flavor!
The Recipe
Olive Oil
4 Chicken Thighs
1 Large Onion
2 Cloves Garlic
2 Cups Cherry Tomatoes
1/4 Cup Pine-nuts
1 Cup Red Wine
1 Bag Baby Spinach Leaves
Parsley and Green Onion for garnish
Saute the chicken, skin side down in 2 tablespoons of olive oil.
Flip the chicken and sear on the other side.
Remove the chicken and set aside.
In the same pan, saute the onion and garlic until translucent.
Stir in sliced cherry tomatoes and pine-nuts.
Allow these to cook for 5 minutes, making sure the pine-nuts don't burn.
Stir in the red wine.
Return the chicken to the pan and cover.
Reduce the heat and allow to cook for 10 minutes until the chicken is cooked through.
Add the baby spinach and return the lid, allowing the spinach to wilt for a few minutes.
Garnish with parsley and green onion if desired.
Serve with pasta and a salad.
