Budget Meals: Andouille Red Beans and Rice


Try this slow cooker flavor packed meal for a new mid-week family favorite.

The Recipe

1 can Light Red Kidney Beans
1 cup diced celery
1 large onion chopped
1 large green capsicum chopped
1 bay leaf
2 cloves of garlic
2 cups chicken stock
1 tsp Ground (or dried) thyme
1/2 tsp cayenne pepper
1/2 tsp salt
1/2 tsp pepper
2x 8.8 oz pouches cooked whole grain brown rice
1x 12oz package fully cooked andouille sausages sliced.
Sliced green onions for garnish

Add to the slow-cooker the beans, celery, onion, green capsicum, bay leaf, garlic, thyme, cayenne, salt, pepper and chicken stock.
Cook on high for 4 hours or low for 8 hours.
Add the rice and andouille sausage to the slow-cooker.
Continue to cook for 1 hour on high.
Remove and discard the bay leaf.
Serve topped with sliced green onions
