Budget Meals: Pasta alla Bandiera (Italian Flag Pasta)
This colorful pasta is a quick and nutritious dinner to warm you up this winter.

The recipe:
3/4 lb dry pasta of your choice
3 tablespoons of olive oil
2 cloves garlic, minced
2 cans (14 ounce each) Italian diced tomatoes, undrained
1 can (15 ounce) cannellini beans, rinsed and drained
1 package (10 ounces) fresh spinach
1/4 cup sliced black olives
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup grated Parmesan cheese (optional)
Cook Pasta according to package directions in a large pot of generously salted water.
In large skillet, heat oil over medium heat and add garlic, cook, stirring for about 2 minutes.
Add canned tomatoes and cannellini beans. Heat to boiling then reduce heat and simmer uncovered 5-7 minutes.
Add spinach, olives, salt and pepper. Cook and stir over medium heat until spinach is wilted.
Drain the pasta into a large bowl.
Top with tomato mixture and cheese if desired. Serve with Italian bread-(optional) Enjoy!
