Budget Meals: Colorful and Tasty Stuffed Peppers


Make plenty of these delicious stuffed peppers for left overs!

The Recipe

4 Large bell peppers (any color)
1 Medium Onion chopped
2 Cloves Garlic chopped
1 lb Ground beef or turkey
1.5 cups Cooked rice
1 15oz can Tomato sauce
1/2 cup Parsley chopped
1 cup Mozzarella cheese shredded
Salt and pepper to taste

Cut the tops off the peppers and clean out all seeds and ribs.  Boil the peppers for 2 minutes in a large pot of water to soften.

In a pan, saute onion and ground meat 3 minutes. Add chopped garlic, salt and pepper. Continue to saute until meat is cooked. Add rice, parsley, and 1 cup of tomato sauce and mix well.

Spoon the mixture to fill the peppers and stand them upright in a baking pan.  Top with the remaining tomato sauce and shredded mozzarella cheese. Broil until the cheese is melted and bubbly. Serve with a side salad.
