Budget Meals: Chimichurri with Chicken and Grilled Vegetables
Summer Grilling Series: This Chimichurri is Good on Everything!
4 Chicken Thighs
3 Bell Peppers, any color, cut in quarters
2 Zucchini, halved lengthwise
Salt and pepper
For the Chimichurri:
1/2 Bunch Parsley
1/2 Bunch Cilantro
4 Cloves Garlic
1/2 cup Vinegar (Red wine or White balsamic)
Red Chilli Flakes (to taste)
1 tsp Salt
1 tsp Pepper
1/2 – 3/4 cup Olive Oil
Season the chicken with salt and pepper.
Toss the peppers and zucchini with salt, pepper and olive oil.
Grill the chicken and vegetables.
While the chicken is grilling, prepare the chimichurri.
Combine the salt, pepper, garlic, parsley, cilantro, and vinegar in a food processor with about 1/4 cup of olive oil. As the food processor is running, drizzle in more olive oil until desired texture is reached.
Stir in red chilli flakes to taste.
Serve grilled chicken and vegetables with chimichurri and enjoy!
