Budget Meals: Easy Weeknight Vietnamese Pho Soup
Light, quick and packed with flavor, this Vietnamese Pho is a great midweek budget meal
The Recipe
2 inch piece Ginger
1 medium Onion
1 tsp Coriander seeds
1/2 tsp Chinese five Spice
1 tsp Fennel seeds
3 Cardamom pods
8 cups Beef stock
1 tsp sugar
14 oz Asian Noodles
1.5 lbs Thinly Sliced beef
Beansprouts
Basil
Cilantro
Spring Onions
Jalapeno Chili
Lime
Slice ginger root length ways and cut onion in quarters. Broil the ginger and onion until charred.
Over medium heat, toast the coriander, five spice, fennel and cardamom in a dry pan for 2 minutes.
Add beef stock to the pan along with the charred ginger and onion, and sugar.
Cover, bring to the boil and simmer for 20 minutes.
Remove the ginger, onion and use a slotted spoon to remove seeds
Add the noodles to the soup and bring back to a simmer.
Add the thinly sliced beef to the soup and simmer for 2 minutes.
Serve the soup with fresh bean sprouts, basil, cilantro, slices of jalapeno and a wedge of lime.
Enjoy the soup with condiments such as sriracha, soy sauce, hoisin or sweet chili sauce.
