Budget Meals: Vegetarian Eggplant Meatballs

Eat these ‘meatballs' with pasta or in a sub for a delicious vegetarian alternative to this family favorite
The recipe
7-8 cups eggplant, diced
4 oz mushrooms, chopped
olive oil, for sauteing
¼ cup water
¼ cup walnuts
2 cloves garlic, crushed
½ cup grated parmesan cheese
1 tsp oregano
½ tsp salt
½ tsp black pepper
¼ cup parsley, chopped
2 cups panko breadcrumbs
1 egg, beaten
Marinara Sauce to serve
• Saute the diced eggplant with a little olive oil and the water until moisture is reduced, approximately 15 minutes
• Remove from pan. Sauté the mushrooms in a little olive oil
• In a food processor, chop walnuts until they resemble breadcrumbs
• Add eggplant and mushrooms, process until smooth
• In a large bowl, combine mixture with all other ingredients
• Mix and then form into balls
• Place on a lined baking tray
• Back for 30 minutes at 350F
• Serve with pasta and marinara sauce if desired
