Budget Meals: Easy Apricot Chicken


This crowd pleasing, budget friendly chicken dish can be made in a flash with ingredients you most likely have in your cupboard right now.

 

The Recipe

2lb Chicken Thighs (or breast, your choice)
Flour
Olive oil for sauteing
2 cloves of Garlic
1/2 cup chicken stock
2 tbsp Soy sauce
1/2 tspn salt
1/2 tspn black pepper
1/2 cup Apricot jam
Parsley for garnish (optional)

Dust the chicken thighs with flour. Add olive oil to a hot pan and brown the chicken.
Remove the cooked chicken from the pan.
Add chopped garlic and saute briefly.
Deglaze the pan with the chicken stock and soy sauce.
Add in the salt pepper and apricot jam.
Stir to incorporate the jam and heat to reduce the glaze.
Return chicken to the pan and coat with the apricot glaze.
Plate the chicken and drizzle with apricot glaze and parsley if desired.

Serve with a side salad or green beans.
