Budget Meals: Creamy Chicken and Mushrooms


Try this creamy and satisfying chicken dish tonight

 

The Recipe

3/4 cup flour
1 tsp garlic powder
1.5 lbs chicken breast, thin sliced
4 tbs butter
2 tbs olive oil
2 cups mushrooms, sliced
4 large shallots sliced
2 cloves garlic, chopped
1.5 cups chicken stock
1 tsp mustard
3 sprigs thyme (or 1/2 tsp dried thyme)
1/2 cup cream
3 tbs corn starch
1/4 cup water
1 tsp salt
1 tsp pepper
parsley optional

•  Combine flour, salt, pepper and garlic powder

•  Dredge thin sliced chicken breast

•  Melt half the butter in a pan along with olive oil

•  Saute chicken until golden brown on both sides. Remove from pan.

•  Melt remaining butter

•  Saute sliced mushrooms, garlic, and shallots until cooked through, stirring (8 mins)

•  Add chicken stock, thyme sprigs and mustard, bring to a simmer

•  Stir in cream

•  Whisk together corn starch and water to a slurry. Stir through the hot mushroom mixture to thicken.

•  Return chicken to pan to warm through

•  Garnish with parsley if desired and serve
