1 large onion
2 cups mushrooms, sliced
4 large chicken thighs
Salt & Pepper
1 tsp oregano
1 tsp thyme
1 tsp basil
1 large clove garlic, chopped
1 large carrot chopped
1 cup of celery, chopped
1 large fresh tomato, chopped
1 cup red wine
1 cup crushed canned tomatoes
Rice for serving
⋅ Place all vegetables in the crockpot.
⋅ Add the wine, crushed tomato, and herbs
⋅ Stir the mixture and place the chicken on top.
⋅ Cover and set the crockpot on High for 5 hours, or on Low for 8-10 hours.
⋅ Serve with rice
Stove top Method
⋅ Add olive oil to pan and place chicken, skin side down, to brown.
⋅ Turn chicken to brown other side and then set aside
⋅ Saute onions and mushrooms in the chicken pan
⋅ Add garlic, salt, pepper, herbs, carrots and celery to the onion and mushroom mixture
⋅ Continue to saute until vegetables are just softening
⋅ Stir in wine and crushed tomatoes
⋅ Return chicken to the pan, cover and simmer for 2 hours
⋅ Serve with rice
